Winemaker's Notes

We have been fortunate to work with Champoux Vineyard fruit since 1992, and we believe it is the most intense and expressive vineyard sites in Washington State.  With the Merlot harvested in September, the Cabernet Sauvignon in October, and  the Petit Verdot in November, the fruit was picked with near perfect acidity and flavors.  We used the pump-under fermentation method on all varietals with 796 yeast used on the Cabernet Sauvignon and Merlot, and PDM yeast used on the Petit Verdot.  All components finished 100% malolactic fermentation in French Oak barrels.  The wine was aged for 30 months in 75% French Oak barrels.

90% Cabernet Sauvignon, 5% Merlot, 5% Petit Verdot

90% Champoux Vineyard Cabernet Sauvignon, Horse Heaven Hills

5% Champoux Vineyard Merlot, Horse Heaven Hills

5% Champoux Vineyard Petit Verdot, Horse Heaven Hills

Tasting Notes

Rich layered aromatics of blackberries, black currant, and a touch of fennel and cedar on the nose, followed by a complex palate of black cherries, vanilla créme brule, and a ripe plum and dark skin.  Lush, dusty tannins are balanced with a touch of oak and sage on the finish.  This is a very powerful, yet elegant Cabernet Sauvignon that you would expect from this world-class vineyard site.
