Winemaker's Notes

The Coyote Vineyard is located in the Wahluke Slope AVA, which is one of the warmer growing regions in the state and with one of the lowest amounts of rainfall.  This helps to control the vigor of the vine, and enables us to ripen the fruit to the fullest potential.  This is the only block of Cabernet Sauvignon we found that consistently has that haunting mint/eucalyptus aromatic, and this vintage really showcases that character.  We harvested the fruit in late October and used the pump-under fermentation process with 796 yeast.  The wine was then aged for 28 months in 65% new French Oak barrels

Tasting Notes

The 2012 vintage has great depth of intense aromatics of mountain blackberry, eucalyptus, black currant, and a slight edge of cocoa on the nose.  With a rich mouthfeel of blackberry, dark cherry, cocoa and a touch of dark spice on the palate, this wine is very balanced with good acidity that leads into a rich finish of round and firm tannins.
