We have been fortunate to work with Champoux Vineyard fruit since 1992 and we believe it is the most intense and one of the most expressive vineyard sites in WA State. With the Cabernet harvested the 12th of October, the fruit came in with near perfect acidity and fruit flavors. We used the pump-under fermentation method with 796 yeast on the Cabernet Sauvignon. 100% malolactic fermentation was completed in 59-gallon French Oak barrels. The wine was then aged for 30 months in 65% new French Oak Barrels with the
other 35% in 2nd and 3rd use French Oak Barrels.

Layers of aromas pour out of this wine. Plum and cherry fruits marry sage and earthy notes and lead into molasses and sweet cigar. Champoux vineyards continue to deliver savory, well-rounded flavor profiles with this 2014 vintage. Dark fruits and black currant meet coffee and dark chocolate with elegant tannins.
