We have been fortunate to work with Champoux Vineyard fruit since 1992 and we believe it is the most intense and one of the most expressive vineyard sites in Washington State. All lots were haverst in early September with all varietals coming into the winery with near perfect acididty and fruit flavors. We used the pump-under fermentation process with PDM yeast to enhance the nice rich flavors you would expect from Champoux Vineyard. The wine was then aged for 36 months in 30% new French Oak barrels, 40% in 3rd fill French Oak and the final 30% in neutral French Oak Barrels.
35% Cabernet Sauvignon, 35% Cabernet Franc, 15% Merlot, & 15% Malbec
100% Champoux Vineyard, Horse Heaven Hills
Exquisite layered aromatics of dark plum, black currant and licorice, with a hint of sage and warm earth tones lead to dense savory flavors of black currant, dark fruits, freshly roasted coffee and dark chocolate that linger forever on this complex palate. Firm, dusty, lush tannins are balanced by a nice touch of oak, acidity, and earthiness on the finish. As is typical of Champoux Vineyard, this is a very elegant but powerful Cabernet Sauvignon that will cellar for quite a long time.
